Penicillium Roqueforti PR

Lyopro PR is a mold culture consisting of a single strain of bright blue-green Penicillium roqueforti, specific to blue cheeses. The use of this freeze-dried culture ensures controlled and very rapid development of a green marbled appearance characteristic of blue cheeses. Due to the medium-high proteolytic and lipolytic activity, the use of Lyopro PR is suitable for maturation (softening of texture) and aroma development in mild to strong blue cheeses. The culture is added directly to the milk during maturation according to the dosage required for the quantity of milk.

Storage : in the freezer, according to the BBD indicated on the bag.
Transport : the cultures withstand transport at room temperature for several days, put in the freezer upon receipt.
Recommended use : take the cultures out 15 minutes before use, take the required dose with the mini-measuring spoons or a precise scale and leave to rehydrate for 2 or 3 minutes on the surface of the milk before stirring. Once the pouch is opened, transfer the powder to a foil pouch or sterile container and return to the freezer.
