Penicillium Candidum
Lyopro PC (Penicillium candidum) is a fast-growing white mold culture, ideal for producing bloomy-rind cheeses. Thanks to its low proteolytic activity and medium lipolytic activity, it creates a smooth, creamy texture while developing a beautiful white to cream-colored rind of moderate density.
Its strong anti-mucor properties effectively protect cheeses from undesirable contamination, ensuring optimal quality throughout ripening. Additionally, this culture tolerates high salt (NaCl) levels and low pH, making it perfectly suited to a wide range of cheese styles.
It can be inoculated directly into the milk during cheesemaking or sprayed (diluted in sterile water) at the beginning of ripening. In general, we recommend a dose of 1/64 to 1/32 teaspoon (using our mini measuring spoons) for 4 liters of milk. It is often combined with Geotrichum candidum for optimal results.

Storage : in the freezer, according to the BBD indicated on the bag.
Transport : the cultures withstand transport at room temperature for several days, put in the freezer upon receipt.
Recommended use : take the cultures out 15 minutes before use, take the required dose with the mini-measuring spoons or a precise scale and leave to rehydrate for 2 or 3 minutes on the surface of the milk before stirring. Once the pouch is opened, transfer the powder to a foil pouch or sterile container and return to the freezer.
