The Codex-ing LyoPro FLORALAC culture ensures standardized and controlled production of fresh cheese, soft and sometimes semi-firm cheeses. It is a fairly standard acidifying and aromatic mesophilic culture which can be used in homemade preparations of fresh cheese, cream cheese, soft cheeses, etc... The presence of Lactococcus lactis subsp. lactis biovar diacetylactis adds a pleasant buttery flavor as well as the addition of Leuconostoc mesenteroides subsp. cremoris which increases the aroma production and the production capacity of small openings in semi-soft, firm cheeses and blue cheeses for example.

Format : 10 CXU (pour 100L de lait en moyenne).

Application : Camembert, Fromage à la crème, Faisselle, Chèvre frais, Chèvre affiné, Edam, Beurre, Type bleu, etc...

Storage : in the freezer, according to the BBD indicated on the bag.
Transport : the cultures withstand transport at room temperature for several days, put in the freezer upon receipt.
Recommended use : take the cultures out 15 minutes before use, take the required dose with the mini-measuring spoons or a precise scale and leave to rehydrate for 2 or 3 minutes on the surface of the milk before stirring. Once the pouch is opened, transfer the powder to a foil pouch or sterile container and return to the freezer.
